Don Carlos Mexican restaurant is one more in the family of local restaurants focused on delighting every guest with a genuine Mexican dining experience. Mexican Restaurants has a name in this Region "Ruben Gimenez" restaurant industry pioneer of Mexican cuisine in this region. With 25 years of experience in the restaurant business, Ruben Gimenez has gained the respect of many.

Ruben opened Los Rancheros on Airport Blvd. in 1989, then partnered with Fernando Chavez to open Sabor a Mexico, Los Rancheros 1, 2 and 3, and years later partnered with Armando Rodriguez to open Aztecas, La Hacienda San Miguel 1,2 and 3. His goal was to provide authentic Mexican food in an atmosphere that genuinely reflected Mexico. He wanted to join with the people to provide wonderful Mexican food and share a rich architecture that would reflect our culture.

Ruben was able to fulfill this vision when he opened El Rancho Mexican Restaurant in 2002 located in Daphne and Don Carlos Mexican Restaurant in Malbis in 2008. Many of the restaurants' architectural designs are typical of the Central region of Mexico with big patios to create a family friendly atmosphere. Dining outside has always been a tradition in Mexican families because it makes for an unforgettable dining experience!
